CARAWAY POTATO SALAD | |
6 med. sized potatoes 1/4 c. oil 1/4 c. wine vinegar 2 tsp. salt 1/2 tsp. ground savory 1/4 tsp. marjoram 2 tbsp. Dijon mustard Simmer potatoes in boiling salted water until tender. Drain, pare and slice into a bowl. Combine oil, vinegar and seasonings in small jar. Shake and pour over hot potatoes. Stir, cover and marinate 30 minutes. Add onion, cucumber, parsley and caraway seeds. Combine mayonnaise and mustard and add to potatoes. Toss and chill and garnish with additional parsley. Yield: six servings. (Really tasty and a bit different than the usual potato salad.) |
