CHARCOALED LEG OF LAMB 
1 leg-of-lamb, deboned & butterflied

MARINADE:

1 lg. onion, thinly sliced
2 tbsp. salt
1 tbsp. rosemary
Juice from 2 lemons
2 tbsp. olive oil

1. Mix together all ingredients for the marinade.

2. Marinate leg of lamb for at least 12 hours, longer if possible, turning periodically.
