SWEET POTATO SOUFFLE 
2 c. mashed cooked sweet potatoes
1 c. sour cream
4 tbsp. melted butter
1/4 tsp. nutmeg
1/2 tsp. salt
Grated rind of half a lemon
4 egg yolks, well beaten
4 egg whites

Put mashed potatoes in bowl. Gradually mix in sour cream. Add butter and beat mixture until smooth. Beat in nutmeg, salt and lemon rind. Mix in egg yolks. In separate bowl, beat egg whites until very stiff and carefully fold into potato mixture.

Pour into a buttered souffle dish and bake at 400 degrees for 25-30 minutes or until top is lightly browned. Serve at once. Serves 4.

Variations: If a more sweet souffle preferred add a tablespoons of brown sugar.
