GERMAN POTATO SALAD 
1/4 lb. bacon
1 med. onion, chopped
1/2 c. hot water
1/4 c. cream
1/4 c. vinegar
2 tbsp. flour
1 tbsp. sugar
Salt & pepper to taste
8 cold boiled potatoes, cubed
2 hard boiled eggs, cut up

Fry bacon in a heavy iron fry pan. Add onion and fry until light brown. Add flour and blend. Then add cream, vinegar, sugar, salt and pepper. Then add potatoes and eggs. Serve hot.

This salad is better is allowed to stand for 15 minutes before serving. If it seems too dry, add more cream. This recipe makes about 1 quart of salad if the potatoes are medium sized.
