OATMEAL PANCAKES 
2 c. milk
1 1/2 c. quick rolled oats
1 c. sifted flour
2 1/2 tsp. baking powder
1 tsp. salt
2 tbsp. sugar
2 eggs, beaten
1/3 c. melted butter

Pour milk over oats and let stand 5 minutes. Sift together flour, baking powder, salt, and sugar. Add beaten eggs to oats mixture. Add butter and sifted dry ingredients; mix quickly and lightly.

If not used right away, store in refrigerator. Keeps for several days in refrigerator. I usually add 1 or 2 chopped apples to batter.
