NEW POTATO SALAD WITH PEAS 
1/4 c. green onions, sliced
1/4 c. sour cream
1/4 c. buttermilk
2 tbsp. plus 2 tsp. light mayonnaise
2 tbsp. mint or parsley, chopped
1/2 tsp. salt
Dash of white pepper
15 oz. new potatoes, sliced, cooked & chilled
1/2 c. tiny frozen peas, cooked & chilled

Combine together onions, sour cream, buttermilk, mayonnaise, parsley, salt and pepper. Add potatoes and peas. Mix well. Cover and refrigerate at least 30 minutes to allow flavors to blend.

Serves 4.
