BAKED CHICKEN WITH OLIVE OIL AND
FRESH LEMON
 
2 chicken breasts, halved
2-4 tbsp. extra virgin olive oil or safflower
1/4 c. freshly squeezed lemon juice
3 cloves garlic, minced
1/4 tsp. dried oregano
1/4 tsp. rosemary

Remove skin from chicken breasts; debone. Combine oil, lemon juice, garlic, oregano and rosemary; pour over chicken. Marinate 20 minutes.

Bake at 350°F for 35 to 45 minutes or until done. Baste frequently during baking.
