CALLALOO AU GRATIN 
8 c. packed with callaloo, approximately 2 bundles
1/4 c. finely chopped onions
2 tbsp. oil
1 tbsp. grated cheese
1 tbsp. bread crumbs

CHEESE SAUCE:

1 oz. butter
1/4 c. flour
1 c. milk
1/2 tsp. mustard
1/4 tsp. salt
1/2 c. grated cheese
Little pepper

Melt butter in saucepan, add flour. Stir 2 minutes, add milk, seasoning and cheese gradually. Stir until the mixture thickens.

Steam callaloo in 1/4 inch water in a covered saucepan for 10 minutes. Turning from time to time, saute onion in oil and add callaloo. Place in 1-quart casserole dish. Pour hot cheese sauce over callaloo. Top with grated cheese and bread crumbs. Bake at 350 degrees until brown on top. Serves 6 people.
