PASTRY FOR SINGLE PIE CRUST 
1 1/4 c. flour
1/3 c. shortening or lard
1 tsp. salt
3 to 4 tbsp. cold water

Mix together flour and salt, cut in shortening or lard until pieces are the size of small peas. Add water 1 tablespoon at a time mixing until all is moistened. Form into ball and place on lightly floured board and roll out to make crust to fit pie plate. Prick and bake in 450 degree oven for 10 to 15 minutes until lightly browned.
