POTATO CAKES 
Instant mashed potato puffs (enough for 4 servings)
1/3 c. shredded cheddar cheese
1/4 c. plus 2 tbsp. cracker crumbs
1 egg, slightly beaten
2 tbsp. snipped parsley
1 tsp. finely chopped onion
1/2 tsp. fine herbs
1/4 tsp. salt
1 tbsp. vegetable oil

Prepare potatoes as directed on package; cool. Mix potatoes, cheese, crumbs, egg, parsley, onion, fine herbs and salt. Heat oil in 10-inch skillet. Drop potato mixture by rounded tablespoons into skillet. Flatten with spatula and fry over medium heat until light brown, about 3 minutes on each side; drain. Yield: 6-8 servings.

Fine herbs is a mixture of the crushed dried leaves of thyme, oregano, sage, rosemary, marjoram and basil.
