CHICKEN FAJITAS | |
8 (6 inch) flour tortillas Non-stick spray coating 1 sm. onion, sliced and separated into rings 2 cloves garlic, minced 1 med. green pepper, cut in strips (or red pepper) 1 tbsp. vegetable oil 9 oz. skinless chicken breast, cut into strips 1/3 c. salsa or taco sauce 2 c. shredded lettuce 1 green onion, chopped Wrap tortillas in foil and place in oven at 300 degrees for 10-12 minutes or microwave on plate for 1 minute. Spray skillet with coating. Add onion and garlic; stir fry for 2 minutes. Add green pepper. Stir-fry 1-2 minutes more or until vegetables are crisp and tender. Remove from skillet. Add oil to skillet. Add chicken; stir-fry 3-5 minutes or until chicken is no longer pink. Return vegetables to skillet. Add salsa. Cook and stir until heated through. To serve, divide chicken mixture evenly among tortillas. Top with lettuce and green onion; roll up tortilla. Makes 4 servings. |
