GINGERBREAD COOKIES 
3 1/2 c. flour
1 1/2 tsp. ginger
1 1/2 tsp. cinnamon
1 tsp. cloves
1 tsp. baking soda
3/4 c. butter
3/4 c. sugar
1 egg
2/3 c. light molasses
1 1/2 tsp. grated orange rind

Combine first 5 ingredients and set aside. Cream butter and sugar. Add egg, molasses and orange rind. Beat until fluffy. Stir in flour mixture, 1/4 at a time, stirring well after each addition. Shape into 3 flat patties. Wrap patties in foil or plastic and chill. Roll out and cut out with floured cutters. Arrange 1 inch apart on cookie sheet. Bake at 325 degrees for 12 to 15 minutes. Cool slightly on cookie sheet before removing.
