BUTTERMILK PANCAKES 
2 c. buttermilk
1/2 tsp. salt
2 tsp. baking soda
2 whole eggs or 3 egg whites
2 c. flour (may use 1 c. white flour and 1 c. whole wheat flour)
4 tbsp. liquid shortening

Combine dry ingredients, add milk, egg and shortening. Mix by hand only until dry ingredients are moistened. Cook on hot greased griddle. Turn when bubbles in batter apear. Serve as soon as second side is nicely browned.
