ZUCCHINI BREAD 
3 eggs
2 c. sugar
2 tsp. vanilla
1 c. oil
3 c. grated zucchini squash
1/2 c. chopped walnuts
3 c. flour
1 tsp. baking powder
1 tsp. baking soda
3 tsp. cinnamon
1 tsp. salt

Beat eggs well. Add sugar and mix well. Stir in oil, zucchini and vanilla. In another bowl sift flour, baking powder, cinnamon, sod and salt. Add sifted dry ingredients; mix real well. Fold in nuts.

Pour into 2 well-greased and floured loaf pans 9x5x2 inches. Bake 1 hour at 350 degrees. Cool 10 minutes before removing from pans. Bread freezes well.
