ELSA'S SPECIAL CHEESE CAKE 
1 1/4 c. graham cracker crumbs
1/4 c. packed brown sugar
4 tbsp. melted butter

FILLING:

1 lb. softened cream cheese
2 whole eggs
1 c. white sugar
1 tsp. vanilla
Pinch of salt
1 pt. sour cream

Mix together graham cracker crumbs, brown sugar and melted butter. Don't grease pan (8 or 9 inch spring form). Press crumbs on bottom and up the sides about 1 inch. (If desired to serve plain, save about 1/4 cup to sprinkle on top.)

Mix all filling items (EXCEPT SOUR CREAM) together, beat until smooth. Add sour cream and mix thoroughly. Pour into crust-lined pan. Sprinkle remaining crumbs on top, if desired, and bake in 350 degree oven for 30 minutes. TURN OFF OVEN and let cake cool in turned off oven. Refrigerate before serving. Vary, if desired, with canned topping - cherries, strawberries, blueberries, etc.
