MEXI CASSEROLE 
2 lb. lean ground beef
4 oz. can green chilies, chopped (mild)
1 lg. can tomatoes, chunked up
2 cans enchilada sauce, mild
1 lb. grated cheddar cheese
1 lg. bag wide egg noodles, cooked
Chili powder to taste
Salt and pepper to taste

Brown beef, add chili powder, salt, and pepper to taste. Add green chilies and tomatoes. Pour into casserole with noodles. Mix in enchilada sauce and 3/4 of grated cheese. Put rest of cheese on top. Bake at 350 degrees until hot and bubbly. Keep covered until last 10 minutes, bake 1 hour at least.
