CHINESE WILTED SPINACH 
1 lb. fresh spinach
5 oz. can water chestnuts, chopped
1 lb. fresh bean sprouts (or canned)
1/2 lb. mushrooms, sliced
4 hard boiled eggs, chopped
8-10 slices cooked bacon, crumbled
1 sm. red onion, sliced

DRESSING:

2/3 c. salad oil
1/4 c. ketchup
1/4 c. vinegar
1/2 tsp. dry mustard
2 tbsp. sugar
1 tsp. celery salt
Pepper to taste

Wash and spin dry vegetables. Place all salad ingredients in a large bowl. Blend or shake dressing ingredients together. Heat dressing thoroughly. Pour over salad and serve.
