PORK CHOPS AND SPANISH RICE 
6-8 pork chops
1 1/2 c. rice, uncooked
1 lg. onion, diced
1 med. bell pepper, diced
1 can tomatoes
Salt and pepper

Lightly brown pork chops in oil. Mix raw rice, onion, bell pepper, salt and pepper and tomatoes. Lay pork chops in mixture in 9x13 baking dish. Cover with foil. Bake at 350 degrees about 1 - 1 1/2 hours until rice is done.
