EASY BISCUITS 
3 to 4 c. Pioneer Mix
1 c. club soda
1 c. sour cream

Mix thoroughly. Roll out about 1/2 inch thick. Cut out biscuits. Bake at 350 degrees until golden brown. Baste with melted butter.

ENCHILADA CASSEROLE:

1 1/2 to 2 lbs. ground beef
1 can cream of mushroom soup
1 (7 1/2 oz.) can rotel tomatoes
1 (10 oz.) can enchilada sauce
Grated cheese
Corn tortillas

Brown meat and drain. Add all liquid ingredients and simmer for 20 minutes. Alternate layers or tortillas and meat in a 9 x 13 inch dish. Top with cheese. Bake at 350 degrees for 25 minutes.
