APPLESAUCE -- CHUNKY STYLE | |
4 Jonathan apples, peeled, cored and cut into 1/2-inch cubes 3 Jonared apples, peeled, cored and cut into 1/2-inch cubes 1/2 c. apple cider 1/4 c. granulated sugar 1/4 c. brown sugar 1 tbsp. grated lemon rind 2 tbsp. fresh lemon juice 1/2 tsp. cinnamon 1/8 tsp. each: nutmeg, cloves and salt In a cooking pot (preferably nonaluminum), combine apples, cider, sugars, rind, juice, cinnamon, cloves, nutmeg and salt. Simmer, covered, 15 minutes, stirring once or twice. Uncover and let apples cook until tender. Partially mash, leaving mixture chunky. Let cool, then refrigerate. This is perfect side for your pork dishes. |
