LENTIL SOUP 
1 bag dried lentils
3 qts. water
2 c. diced carrots
2 c. diced celery
2 c. diced onion
1 smoked butt or ham bone
Sprinkle parsley
2 bay leaves

Wash lentils good and put in soup pot. Add water, veggies and smoked butt. Simmer for 1 1/2 hours. Remove meat and dice. Replace meat and simmer another 15 minutes. Serve. To make more enjoyable for kids, add some pre-cooked macaroni. Easy to freeze.
