NO EGG CHOCOLATE CAKE 
1 1/2 c. flour
1 c. sugar
1/4 c. cocoa
1 tsp. baking soda
1/2 tsp. salt
1 c. water
1/4 c. + 1 tbsp. oil
1 tbsp. vinegar
1 tsp. vanilla

Grease and flour 2 (8") round cake pans. In large mixing bowl, combine flour, sugar, cocoa, baking soda and salt. Add water, oil, vinegar and vanilla. Stir until smooth and thoroughly blended. Pour into cake pans. Bake at 350 degrees for about 25 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes. Remove from pan. Cool completely on wire rack. May be iced or served with fruit. Makes good cupcakes too, about 12 cupcakes.
