BAKED CHICKEN SALAD | |
4 tbsp. flour 4 tbsp. butter 1 c. chicken broth 1 c. diced celery 2 tsp. minced green onions 1/2 c. chopped almonds 1/2 c. water chestnuts 2 hard boiled eggs, chopped 3/4 c. mayonnaise 2 c. diced chicken 2 c. crushed potato chips, divided 1/2 tsp. salt 1/2 tsp. pepper 1/4 tsp. Worcestershire sauce 1 tbsp. lemon juice Make cream sauce with flour, butter and broth. Add chicken and then other ingredients and mix thoroughly. Line baking dish with half of the potato chips. Pour in the chicken mixture and top with remainder of potato chips. Bake uncovered at 400 degrees for 15-20 minutes. May be prepared in advance and bake before serving. |
