CHEESE STUFFED SQUASH 
3 acorn squash
2 tbsp. chopped green pepper
2 tbsp. chopped onion
1/3 c. butter, melted
2 c. grated American cheese
3 c. soft bread crumbs
1 tsp. salt
1/8 tsp. pepper
4 slices bacon, cooked & crumbled

Cut squash in half, remove seeds, brush with butter, place cut side down on greased pan. Bake at 375 degrees for 30 minutes. Scoop out center, mash and add remaining ingredients. Refill squash shells. Return to oven and bake for 25 minutes. These can be frozen. When ready for use, thaw and bake 25 minutes or microwave about 12 minutes on high.

Since microwave ovens vary in power, you may need to adjust your cooking time.
