PINEAPPLE-LIME SALAD | |
2 (3 oz.) pkgs. lime Jello 1 1/4 c. cold water 1 (8 1/4 oz.) can sliced pineapple, drained 1/4 c. chopped celery 2 c. boiling water 1 tbsp. vinegar 1 sm. banana, sliced 1/4 c. mayonnaise Dissolve Jello in 2 cups boiling water. Add cold water and vinegar. Chill until thick (about 1 1/2 hours). Pour 1/2 cup of thickened Jello into 9 x 5 inch loaf pan. Arrange 3 pineapple slices on it. Now measure 1 cup of Jello and fold in banana slices. Spoon into pan and chill about 15 minutes. Meanwhile, blend mayonnaise with rest of Jello. (Use a fork). Stir in celery. Spoon into pan. Chill until firm (about 4 hours). Unmold and serve. Makes 10 servings. |
