CHICKEN TAGINE WITH OLIVES AND
LEMONS
 
Chicken Tagine is a Moroccan dish popular in Kenitra, Morocco (Africa). It is normally prepared in a Tagine, which is a teepee-shaped crockery or iron cooking vessel, but may be cooked in a Dutch oven or other large pot.

Assorted chicken pieces (2 lbs.), skin removed
Onion, thinly sliced
1 tbsp. parsley
1/2 tsp. pepper
1-2 lemons, wedged
1 jar green olives (as many as desired)

Place all in large stewing pot and cook slowly until chicken is done. Serve with crusty French or Italian bread or pita.

I cooked this in a moroccan tagine and it was delicious.
So easy, so tasty. I served it with lighty toasted ciabatta spread with a little virgin olive oil. Wonderful!!
