MAKE AHEAD SALAD 
6-8 strips bacon, crumbled
1 head lettuce, shredded
1 red onion, chopped fine (or use scallion)
1/2 c. diced celery
1 pkg. frozen peas
1 lg. green pepper, chopped fine
2 tsp. sugar
2 c. mayo
1/4 c. shredded cheese

Place lettuce in bowl. Mix together onion, celery, uncooked peas, pepper. Spread over lettuce. Blend mayo and sugar until smooth. Spread over mixture. Sprinkle with cheese and bacon. Cover and refrigerate at least 12 hours. Serves 12.
