ORANGE PECANS 
4 c. pecan halves
1 tbsp. grated orange rind
1 tbsp. cinnamon
1/4 c. orange juice
1 c. sugar

Combine orange juice, orange rind, cinnamon and sugar in a heavy sauce pan. Cook over medium heat until mixture comes to a full boil. Stir in pecans. Continue to cook, stirring until pecans are coated and all the syrup is absorbed. Remove from heat and stir until pecans are separated. Spread onto waxed paper to cool.
