STUFFED TOMATOES 
4 ripe tomatoes
2 tbsp. chopped scallions
2 tbsp. chopped parsley
1/2 c. Feta cheese, crumbled
1/4 c. bread crumbs
3 tbsp. olive oil

Cut tops off tomatoes. Scoop out pulp and seeds. Chop pulp and combine with remaining ingredients. Place in hollowed out tomatoes and bake in a 350 degree oven for approximately 15 to 20 minutes.
