RATATOUILLE 
4 sm. zucchini, sliced (about 2 1/2 lb.)
1 med. green pepper, chopped (about 1 c.)
1 med. onion, finely chopped (about 1 c.)
4 med. tomatoes, each cut into fourths (remove skin by par boiling and peeling first)
2 tbsp. vegetable oil
2 tbsp. butter
1 clove garlic, minced
2 tsp. salt
1/4 tsp. pepper
1/4 c. Parmesan cheese

Saute onion, garlic and green pepper in oil and butter for 3 minutes. Add zucchini and saute for another 3 minutes. Add remaining ingredients and heat thoroughly until everything is tender. Before serving, sprinkle with Parmesan cheese. If freezing, do not add cheese; that can be added fresh when ready to serve. 6 to 8 servings.
