VEGETABLE SALAD 
2 lg. tomatoes, skinned, seeded & diced
1 onion, diced
1 cucumber, seeded & diced
1 green pepper, diced
3 tbsp. olive oil
1 tbsp. lemon juice
Sliced, pitted black olives (optional)

Toss tomatoes, onions, cucumbers and green pepper. Stir together oil and lemon juice. Pour over vegetables. Toss. Garnish with olives. 6 servings. 85 calories.
