5 lbs. potatoes, peeled 1/2 c. (1 stick) butter 1 (8 oz.) pkg. cream cheese, softened 1 c. sour cream 1/2 c. Parmesan cheese 4 green onions, chopped 1/2 tsp. pepper salt, to taste Boil potatoes until tender. Mash while hot. Add butter and cream cheese. Add remaining ingredients and stir enough just to combine. Serve immediately. If not serving within an hour, refrigerate. One hour before serving, remove from refrigerator and bake uncovered for 30 minutes at 350°F to heat through. Makes 10-12 servings. Submitted by: Carol Durrett |
