CHOCOLATE CHIP CAKETTES 
2 c. sifted flour (all purpose)
2 1/4 tsp. baking powder
1/2 tsp. salt
1/2 c. shortening
1 c. sugar
3 egg whites, unbeaten
3/4 c. milk
1 tsp. vanilla
1 c. chocolate chips

Preheat oven to 375 degrees. Line muffin tins with paper cups. Sift together flour, baking powder and salt; set aside. Cream shortening and sugar until fluffy. Add egg whites and beat well. Add flour alternately with milk, beating well after each addition. Blend in vanilla and chocolate chips. Fill paper lined muffin tins 2/3 full. Bake about 20 minutes or until cakes test done. Makes 20 cupcakes.
