POTATO SOUP | |
Recipe for two. Easy to double or increase to any amount you wish. 1 cup diced potatoes, 1/2-inch or less 1/2 cup diced bell pepper 1 pint half and half 2 tbsp. butter salt and pepper 5 slices bacon, fried crisp and crumbled Boil potatoes and green bell pepper in enough water to cover. When potatoes are tender add half and half. Reheat but don't boil. Add butter, let it float. Add crumbled bacon, let it float. Don't stir until ready to serve it. I always cook it in a cast iron pot and just sit that on the table. Makes an attractive dish. Get creative... Add a small can of clams and voila clam chowder. Add a cup of firm white flesh fish and voila fish chowder. Add the clams or fish before the half and half. It's pretty hard to mess this up! Submitted by: John Lane |
