BANANA NUT CAKE 
1 3/4 c. whole wheat pastry flour
1 tsp. baking soda
1/2 tsp. salt
2 to 3 bananas, ripe
1 med. lemon juiced
1/2 c. soy milk or milk
1/2 c. Canola oil
2/3 c. honey or sugar
2 eggs
1 tsp. vanilla
1/2 c. pecans, finely chopped

Cream oil and honey, add eggs one at a time, stir in vanilla. Mash bananas, add lemon juice and soy milk to bananas and stir. Sift flour, soda and salt. Alternate flour first and last with banana mixture into creamed egg mixture. Stir in pecans. Bake at 350 degrees for 35 to 40 minutes in a tube pan.
