SQUASH CASSEROLE 
6 squash
2 eggs, beaten
1 c. potato soup
1 med. onion, chopped
1/2 lb. grated cheddar (save 1/2 for topping)
2 tbsp. butter, melted

Cook squash, drain and mash. Mix all ingredients except 1/4 pound cheese. Place in buttered casserole dish. Top with 1/4 pound cheese. Bake 20 minutes at 400 degrees uncovered.
