PUMPKIN WHOOPIE PIES 
2 c. brown sugar
1 c. vegetable oil
1 1/2 c. pumpkin
3 c. flour
2 eggs
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla
1 1/2 tbsp. cinnamon
1/2 tsp. ginger

Cream oil and sugar, add pumpkin, eggs and dry ingredients. Drop by teaspoonful onto cookie sheet. Bake at 350 degrees 10-12 minutes.

FILLING:

3 c. Crisco
4 c. confectioners sugar
1 tbsp. milk
4 egg whites, beaten
4 tbsp. flour
2 tbsp. vanilla

Combine all ingredients and beat until smooth. Sandwich filling between 2 cookie halves to form pies.
