SQUASH CUSTARD PIE 
1 c. mashed cooked winter squash
1 c. whipping or heavy cream
1 c. sugar
3 eggs, lightly beaten
1 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
Dash salt
1 unbaked pie shell (9 inches)
Whipping cream for topping

In a mixing bowl combine all ingredients except for the pie shell and additional whipping cream. Pour into pie shell; bake at 375 degrees for 10 minutes. Reduce heat to 350 degrees; bake for 45 minutes. Garnish with a dollop of whipped cream. Yield: 8 servings.
