HOT MILK SPONGE CAKE 
4 eggs, well beaten
2 c. sugar
2 c. flour
2 tsp. cream of tartar
1 tsp. salt
1 c. hot milk
4 tbsp. butter
2 tsp. vanilla or 1 tsp. vanilla + 1 tsp. lemon extract

To well beaten eggs gradually add sugar. Sift flour, cream of tartar and salt 3 times. Fold into egg and sugar mixture. Add hot milk last with butter melted in it and the extract. Bake at 325 degrees in 2 layer pans or a 9"x13" pan which has been greased for about 25 to 30 minutes.
