FANCY PANCAKES FROM SCRATCH 
1 1/2 cups all-purpose flour
1 tsp. salt
3 tbsp. sugar
1 1/2 tsp. baking powder
1 egg, beaten
3 tbsp. melted butter
1 to 1 1/4 cups milk

Topping:

lots of butter
3/4 cup granola
4 tbsp. chopped pecans
4 tbsp. grated coconut
real maple syrup

Mix dry ingredients together. Combine egg, 1 cup milk and melted butter. Lightly stir the milk mixture into the flour mixture. The batter will still be lumpy. Add additional milk to reach the consistency of very heavy cream.

Cook both sides of the pancakes on a hot buttered griddle, using 1/4 cup batter for each cake.

Top each serving with granola, pecans, coconut, lots of butter and maple syrup.

Serves 4.
