CELERY PORK CHOPS 
6 pork ribs or loin chops, cut 3/4 to 1 inch thick
1 tbsp. salt
3/4 c. chopped celery
1/8 tsp. pepper
2 tbsp. chopped onion

Brown chops in lard. Pour off drippings. Season with salt and pepper. Add celery and onions. Cover slightly and simmer 45 minutes. Serves 6.
