“CRISS-CROSS PEANUT BUTTER COOKIES” IS IN:

CRISS-CROSS PEANUT BUTTER
COOKIES
 
1 cup peanut butter (creamy or crunchy)
1/2 cup butter
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
1/2 tsp. vanilla
1 egg
1 1/2 cups sifted flour
3/4 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt

Cream peanut butter and butter. Add sugars gradually and cream together until light and fluffy. Add vanilla and egg and beat well. Stir in flour, sifted together with baking soda, baking powder, and salt. Beat thoroughly.

Refrigerate dough for at least 30 minutes.

Shape into 1 inch balls and place about 2 inches apart on a baking sheet.

Flatten with the tines of a fork, forming a criss-cross pattern.

Bake in a preheated 375°F oven for 10-12 minutes.

Taste is very good & peanut buttery. After refrigerating 45 minutes, one egg was not sufficient to keep the dough together to shape into balls. I added another egg and it worked perfectly. Overall, this is a worthwhile bake.

These are great...my kids love them but I did add coarse sugar on top of them after I added the cress cross pattern, I think it just added a little something!!! LOVE THEM!!!

I made these with Peanut M&Ms, they were so good. Just add a medium size bag (2 cups) and you're good to go!

Have not tried this yet but plan to. Question: can you use self rising flour and omit the baking soda and baking powder? I love all the great review's CM gets I am printing a lot of her recipes.

I've been craving peanut butter cookies, but with chocolate. I've tried the recipes with the kiss in the center but they were too chocolaty for me :( I followed the directions on this recipe to a T and topped each cookie with 3 m&m's - ahhhhh heaven!

Because my daughter and I can't have sugar I substitued the white and brown sugar with Ideal. A sweetener with no sugar. It was absolutely delicious!
