CHOCOLATE CHIP MINT MERINGUES 
3 egg whites
1 tsp. vinegar
1 c. sugar
3 drops green food coloring
1 (10 oz.) pkg. Nestle mint-chocolate morsels

Line a large baking sheet with a double thickness of waxed paper. Set aside. Preheat oven to 350 degrees. In a large mixing bowl, beat egg whites and vinegar until foamy. Add sugar, 1 tablespoon at a time. Beat until stiff peaks from (very stiff). Blend in food coloring. Fold in mint chips. Drop meringue by teaspoonfuls onto waxed paper. Place baking sheet in oven, turn off heat. Let stand in oven overnight. Store in a cool dry place. Makes about 5 dozen. Great for Christmas or St. Patrick's Day.
