MINCEMEAT COOKIES 
1 c. shortening
2 c. sugar
3 eggs, beaten
3 1/2 c. flour
1 tsp. baking soda
1/8 tsp. ginger
1 tsp. nutmeg
1/2 tsp. salt
1 c. moist mincemeat
1/2 c. nuts

Cream shortening and sugar. Add beaten eggs. Mix dry ingredients. Add mincemeat to shortening and sugar mixture. Add dry ingredient mixture. Drop by teaspoon onto greased cookie sheet. Bake at 375 degrees for 10-12 minutes.
