RED RUSSIAN RING 
2 env. Knox unflavored gelatin
3 c. tomato juice, divided
1/2 c. Russian dressing
1 c. finely chopped green pepper (opt.)
1/2 c. finely chopped celery (opt.)

In a large bowl mix unflavored gelatin with 1/2 cup cold tomato juice. Heat remaining 2 1/2 cups juice to boiling. Add to gelatin mixture and stir until gelatin is completely dissolved. Add Russian dressing, chill, stirring occasionally, until mixture is consistency of unbeaten egg white. Fold in green pepper and celery. Turn into a 5 cup ring mold or bowl. Chill until firm. Unmold and serve.
