POTATOES STUFFED WITH CRABMEAT 
4 baking potatoes
8 oz. crabmeat
1/2 c. butter
1/2 c. Swiss cheese, grated
1/2 c. Sharp Cheddar cheese, grated
1 tsp. salt
1/4 tsp. pepper
4 tsp. onion, grated
Milk
Paprika & parsley as desired

Scrub potatoes and bake at 450 degrees until easily pierced. Cut in half and scoop out insides. Mash with butter, milk, salt, pepper and onion. Mix in half the Cheddar cheese and all the Swiss cheese; fold in crabmeat. Refill shells, sprinkle with remaining cheese and paprika and parsley. Reheat in 400 degree oven for 15 minutes. (May freeze before reheating, but increase heating time).
