SCALLOPED POTATOES 
25 lb. potatoes, peeled & sliced
1 c. chopped onion
1 1/2 tbsp. pepper
4 tbsp. salt
1 1/2 c. flour
2 c. butter
6 qt. heated milk

Make a thin white sauce by melting butter in large kettle. Add flour, salt and pepper. Stir until smooth. Add slowly in heated milk, stirring constantly until thickened. Cook potatoes until transparent. Combine potatoes and white sauce and onions. Bake until potatoes are done. Approximately 1 hour. Serves approximately 75.
