ZUCCHINI SOUP | |
3 slices bacon substitute, cut in sm. pieces 1 med. onion, chopped 1 clove garlic, minced 8 med. zucchini, cut in chunks or 8 c. chopped 1 (10 1/2 oz.) can beef consomme or bouillon 2 1/2 c. water 1 tsp. salt 4 tbsp. fresh parsley 1 tsp. basil leaves 1/8 tsp. pepper Freshly ground Parmesan on top Brown bacon substitute. Pour off all but 1 tablespoon fat. Stir onion and garlic in fat until tender. Add remaining ingredients except cheese. Bring to a boil for about 20 minutes. Blend until smooth. Can be frozen. |
