OLD FASHIONED BREAD STUFFING 
3 qts. fresh bread crumbs
1/3 c. chicken fat
1 c. finely chopped celery
1 c. minced onion
4 tsp. salt
1 tsp. poultry seasoning
1 tsp. pepper
1 c. chicken stock

Saute celery and onion in chicken fat until tender. Add to bread crumbs. Mix in seasonings and stock. For dry stuffing, add less chicken stock. Cool and place stuffing in bird just before roasting. Will fill a 12 lb. bird.
