LEMON CURD 
3 eggs, well beaten
1/8 tsp. salt
1 c. sugar
1/4 c. lemon juice and lemon rind from lemon
2 tbsp. butter

Combine ingredients in top of double boiler. Cook over hot water, stirring constantly until thickened. Pour into pastry. Put circle in muffin tip. Bake about 10 minutes. Watch. Fill when cool.
